Virgin Voyages has announced that its new ship Brilliant Lady will feature the line’s first Spanish-inspired restaurant, Rojo by Razzle Dazzle. The introduction of the venue follows the success of Lucky Lotus by Razzle Dazzle — the Chinese-inspired restaurant that launched in November on Scarlet Lady.
Acclaimed chefs Justin Severino and Nate Hobart will co-helm Rojo by Razzle Dazzle, bringing their ingredient-driven, shareable dining innovations to sea. Co-chefs at Morcilla, the Spanish-style charcuteria taking Pittsburgh by storm, Severino and Hobart are taking their passion for Spanish gastronomy straight to Virgin Voyages, along with some of their recipes. Rojo’s new menu will feature Morcilla’s legendary Oxtail Montadito with braised oxtail, caramelized onion, mahón cheese, and a crostini.

By day, Razzle’s signature brunch will have a Spanish-American twist, with new dishes including jamon croquettes paired with classics like açai bowls, pastries, and frittatas. When the sun sets, Rojo will transform into an elevated dining experience offering things like pintxos, tapas, and platos grandes — all inspired by Spain’s renowned culinary regions.
The cocktails will live up to the cuisine, as Virgin Voyages has partnered with Onada Consulting from Barcelona to bring an authentic Spanish touch. The line also sought out iconic bars in cities including Barcelona, Madrid, and San Sebastian. Cocktails capture the authentic Spanish spirit with authentic ingredients and flavors. The wine menu will span bold reds like Rioja and Ribera del Duero to refreshing Albariños from Rias Baixas. For brunch, Rojo will serve up vermouths, sangrias, sherries, and sparkling Provocativo cava spritzes.
Virgin Voyages completely reimagined the Razzle Dazzle space for Rojo, creating an environment that honors Spain’s communal dining traditions. Rich wooden accents, deep reddish-orange tones, and sleek finishes make the new look pop. Paired with a mix of shared tables and intimate nooks, the inviting space will bring people together over amazing food and delicious drinks.

Rojo by Razzle Dazzle isn’t the only refreshed dining experience coming to the Virgin Voyages fleet. Extra Virgin is pairing existing Sailor favorites with new pastas, arancini, seafood risotto, and roasted monkfish, among others. At Gunbae, the only Korean BBQ at sea, new items include kimbap rolls, bulgogi fire meat, and bo ssam (whole roasted pork butt with oysters and caviar).
