The Ritz-Carlton Yacht Collection has announced details on the culinary offerings coming to Ilma, its second superyacht that’s set to debut this September.
Guests will be able to choose from five dining venues aboard the vessel and a refreshed room service menu. Restaurant highlights include Seta su Ilma by Chef Fabio Trabocchi — a modern Italian restaurant inspired by the chef’s love for the sea, and The Beach House, an open-air Pan-Latin and Caribbean venue created with Chef Michael Mina.
“Our guests turn to The Ritz-Carlton Yacht Collection for enriching sensory experiences, not only within the destinations we travel to but also throughout their time spent onboard,” expressed Jim Murren, executive chairman and CEO of The Ritz-Carlton Yacht Collection. “The internationally inspired culinary program on Ilma introduces yet another extraordinary dimension to our journey of discovery, reinforcing our dedication to unparalleled voyages at sea.”
Other restaurants on board will include Memorī, Mistral, and Tides. A café, The Living Room, will also be available, as will in-suite dining and Dining Privée — an intimate space for celebratory dinners and special events.
Seta su Ilma
Italian for “Silk on Ilma,” Seta su Ilma will feature seasonal tasting menus that offer a contemporary interpretation of Italian cuisine. Dishes will range from fresh seafood to homemade pasta, all paired with fine wines from a deep cellar of Italian whites and reds. Dinner will include a seven-course tasting menu, while lunch will be five courses on select afternoons. Seta su Ilma will be offered at an additional fee, with an optional wine pairing also available.
“The Seta su Ilma experience will be inspired by my love for the sea in the magnificent setting of The Ritz-Carlton Yacht Collection. The exquisite Italian coastal cuisine will be our inspiration for a journey of elegance and timeless beauty as part of La Dolce Vita,” said Chef Trabocchi.
The Beach House
At The Beach House, bright interiors will flow into the yacht’s expansive outdoor pool deck. The beach club-inspired venue will meld globally-influenced flavors in a relaxed but upscale atmosphere. The menu is being developed in collaboration with James Beard Award-winning chef Michael Mina. The restaurant, which will be open for lunch and dinner as well as for brunch events, will feature flavors from the Caribbean and South and Central America.
“The Beach House will be the ultimate culinary complement to Ilma,” said Chef Mina. “I have always been fascinated with the powerful flavors and vibrant energy of the countries that make up Latin America and the Caribbean, and I have dreamed of bringing an array of their ingredients together one day. I am thrilled to be collaborating with The Ritz-Carlton Yacht Collection to introduce this new restaurant to Ilma’s guests.”
Memorī
Memorī will serve authentic Pan-Asian cuisine, anchored by an open twelve-seat sushi bar. Open for lunch and dinner, passengers will be able to enjoy Japanese bar snacks, sashimi, tempura, dumplings, Wagyu, and more with both indoor and outdoor seating options. A selection of sake, Japanese whiskeys, champagne, and plum wines will accompany the dishes.
Mistral
Located just off the main pool deck, Mistral will offer timeless Mediterranean fare with traditional breakfast dishes in the morning as well as pasta, pizza, salad, fresh seafood, and steak throughout the day. With its spot towards the side of the ship, Mistral offers some of the best views on Ilma.
Tides
Tides will offer seasonal menus inspired by the regions that Ilma will explore. For the vessel’s inaugural Mediterranean season, the menu will capture elements of Italian, Greek, and Spanish cuisines. As the yacht moves to the Caribbean, the menu will transform to elements of the Florida Keys, the Bahamas, Puerto Rico, and the southern Caribbean.
